Ghost Gum Cabernet Sauvignon 2015
This single-vineyard Cabernet Sauvignon was pruned to produce extremely small volumes of exceptionally concentrated grapes. The bunches were harvested by hand at full ripeness, before a 10 day cold-soak. The wine was then fermented in stainless steel and transferred into 100% new French oak barriques for a total of 34 months. 2015 was a spectacular vintage for this wine.
TASTING NOTES
Dark cherry, blackberry, oak and toast abound on the nose. The rich oak component follows from the nose to the palate, where there is a lovely balance between concentration, flesh, acidity and firm tannins. The finish is long, clean and savoury, asking to be paired with a succulent meat dish. The wine has great potential to be cellared and should continue to impress well beyond 2035.
